Grocery Shopping List
Produce:
- 1 medium Onion
- 2 cups Cherry Tomatoes
- 2 cups Cucumber
- ½ cup Red Onion
- Bottled Lemon Juice
Dairy & Frozen:
- 6 large Eggs
- ½ cup Heavy Cream
- ½ cup Cream Cheese
- 1 cup Shredded Cheese
- 1½ cups Frozen Mixed Vegetables
Pantry:
- Premade Pie Crust or Puff Pastry
- Maple Syrup
- Dijon Mustard

Creamy Vegetable Quiche
- Preheat oven to 180°C (350°F). Blind bake the crust for 10 minutes.
- Chop the onion and grease the pan. Cook the onions until softened.
- In a bowl, whisk together eggs, heavy cream, cream cheese, shredded cheese, and spices.
- Spread onions and thawed vegetables over the crust. Pour the egg mixture on top.
- Bake for 40–45 minutes. Let cool for 10 minutes before serving.
Tomato Cucumber Salad
- Combine halved cherry tomatoes, sliced cucumber, and thinly sliced red onion in a bowl.
- Whisk together lemon juice, maple syrup, Dijon mustard, salt, and pepper for the dressing.
- Pour dressing over the veggies and toss gently. Chill before serving.
Sparkling Lemon Water
- Mix bottled lemon juice into sparkling water to taste.
- Serve chilled.
