Creamy Vegetable Quiche

  1. Preheat oven to 180°C (350°F). Blind bake the crust for 10 minutes.
  2. Chop the onion and grease the pan. Cook the onions until softened.
  3. In a bowl, whisk together eggs, heavy cream, cream cheese, shredded cheese, and spices.
  4. Spread onions and thawed vegetables over the crust. Pour the egg mixture on top.
  5. Bake for 40–45 minutes. Let cool for 10 minutes before serving.

Tomato Cucumber Salad

  1. Combine halved cherry tomatoes, sliced cucumber, and thinly sliced red onion in a bowl.
  2. Whisk together lemon juice, maple syrup, Dijon mustard, salt, and pepper for the dressing.
  3. Pour dressing over the veggies and toss gently. Chill before serving.

Sparkling Lemon Water

  1. Mix bottled lemon juice into sparkling water to taste.
  2. Serve chilled.
